Louisiana Creole Roast Recipe

Ingredients:

3 lb. roast (well trimmed), 1 thick cut of round steak may be used
2 tbsp. oil
1 tsp. salt
1 tsp. pepper
1 sliced onion
1 1/2 c. chopped celery
2 (16 oz.) cans tomatoes or tomatoes with okra, undrained
6 drops red pepper sauce

Cooking Directions:

Brown meat in oil in large heavy pan. Season with salt and pepper, add onions, celery, green pepper and saute' until tender. Add remaining ingredients. Cover and simmer for 2 hours or until tender or bake at 350 degrees for about 2 hours. Thicken sauce with cornstarch for gravy when done.
