West African Peanut Butter Gravy Recipe
Ingredients:
2 lbs. beef cubes1/2 tsp. nutmeg
1 tbsp. chili powder
3 med. onion, sliced
1 clove garlic, minced
3/4 c. tomato paste
6 c. water
Red pepper, if desired
3 bouillon beef cubes
1/2 c. chunky peanut butter
Cooking Directions:
In a large heavy kettle, heat 3 tablespoons oil. Add beef cubes (cut 1 inch or so and roll in flour). While browning, add 1/2 teaspoon nutmeg and 1 tablespoon chili powder. When meat is brown add remaining ingredients except peanut butter. Simmer until meat is tender. Add peanut butter and stir until thoroughly mixed. (This will thicken the gravy). Simmer on low another 20 minutes. Serve over rice.Other Recipes you might like:
