Chilled Cantaloupe Soup Recipe
Ingredients:
1 (3 lb.) ripe cantaloupe1/2 c. dry sherry
1/4 c. sugar
1/4 c. orange juice
Cooking Directions:
1. Cut melon in half; scoop out and discard seeds. Scoop out cantaloupe meat.2. In blender or food processor, fitted with the steel blade, combine cantaloupe and rest of ingredients. Blend until smooth, several times, if necessary. Turn into bowl; chill over ice cubes or refrigerate, covered, until very cold.
To serve 3. Serve in chilled serving bowls. Makes 4 cups. 5 servings.
