Hearty Corn Chowder Recipe

Ingredients:

2 lg. onions, finely chopped
1 c. water
4 potatoes, peeled & chopped
1/2 tsp. pepper
16 oz. frozen corn or 1 (16 oz.) can low sodium corn, drained
2 c. skim milk
1 green pepper, chopped

Cooking Directions:

Saute onion and green pepper in teflon pan or in a little oil. Add water, potatoes, pepper to onion and green pepper. Cook until potatoes are tender, about 15 minutes. Mash potatoes slightly. Add corn and milk. Heat until simmering. Yield: 4 servings.

Recipe may be doubled except for pepper. Also freezes well. VARIATION: May add 1/8 pound low sodium, low-fat ham cut into bite- size pieces and 1 can of any prepared dried beans (rinsed and drained to remove excess sodium).
