Lamb Stock Recipes


1. Crown Roast Of Lamb
16 chop crown roast of lamb (with the trimmings make a stock), 1 tsp. minced garlic, 1/2 tsp. thyme, chopped, 1/2 tsp. rosemary, chopped, 1 tsp. salt, 1/4 tsp. pepper (or fresh ground pepper), 2 tbsp. cornstarch, 3 tbsp. port wine, 2-3 c. consomme or beef broth or lamb stock, Fresh rosemary for garnish

2. Lamb Kidney Saute
12 lamb kidneys, 1/4 c. California wine vinegar, 1 med. onion, sliced, 1 c. celery, sliced, 3 tbsp. shortening, 3 tbsp. flour, 1 c. stock or water, 1 c. mushrooms, sm. whole or sliced, 1 1/2 tsp. salt, Pepper, 1 tsp. Worcestershire sauce, 1/4 c. California dry sherry

3. Lamb Braised With Turnips, Cabbage, Mint And Chives
5 lbs. boneless lean lamb, cut into 1-inch cubes, 4 turnips, peeled and cut into chunks, 1 head cabbage, cut into chunks, 2 c. mint, chopped, 1 c. chives, chopped, 1 onion, chopped, 3 cloves garlic, chopped, 3 lg. potatoes, peeled, cut into chunks, 2 tomatoes, peeled, seeded and chopped, 1 c. white wine, 3 c. chicken stock, 1/2 c. olive oil, Salt and pepper to taste

4. Lamb Pie
2 lbs. ground lamb, 3 tbsp. butter, 2 med. onions, chopped fine, 1 clove garlic, chopped or crushed, 3 tbsp. flour, 1 1/2 c. chicken broth or beef stock, 1 1/2 tbsp. Worcestershire sauce, 1/8 tsp. cayenne or more to taste, Pinch curry powder, Salt and black pepper

5. Lamb Fillet In Cream Sauce
1 (2 lb.) lamb fillet, 1/4 c. butter, 4 shallots, chopped, 1 tbsp. flour, 2 c. chicken stock, 3 tbsp. lemon juice, 1/2 lb. button mushrooms, 1 rosemary sprig, divided, or 1/2 tsp. dried, Salt & pepper, 2 egg yolks, 2/3 c. single cream



6. Lamb Curry
2 lbs. lamb, cut in cubes, 3 tbsp. olive oil, 1 chopped onion, 1-2 tbsp. curry powder, 1 c. chicken stock, can use bouillon cube, 3 carrots, sliced, 4 celery stalks, chopped, 3 tbsp. chopped parsley, 1 apple, peeled and cut in sm. pieces, 1/2 c. raisins, 1/4 c. chopped cucumber

7. Stuffed Lamb Kharouf Mihshee
3-4 lb. lamb roast, 1 cinnamon stick, 1 1/2 tsp. salt, 1/2 lb. ground lamb, 1 tsp. allspice, 2 c. rice, 2 tbsp. pine nuts, 2 tbsp. slivered almonds, 1 tbsp. butter

8. Lamb Curry With Bananas And Saffron Rice
1 c. thinly sliced onion, 3/4 c. chopped green pepper, 1 sm. clove garlic, minced, 2 tbsp. olive oil, 2 tbsp. flour, 2 c. meat stock, 1/2 c. tomato sauce, 2 tbsp. minced parsley, 1 tbsp. curry powder, 1 tsp. salt, 1/8 tsp. pepper, 1 lg. bay leaf, Pinch of thyme, Dash of mace, 2 whole cloves, 2 1/2-3 c. cooked diced lamb, 3 bananas, sliced 1/2" thick sauteed with pareve butter, Saffron rice

Bones and scraps from 2 legs of lamb, 2 med. carrots, roughly chopped, 2 med. onions, roughly chopped, Salt and pepper, 2 lg. celery stalks, chopped, 4 lg. cloves of garlic, smashed, 1 bay leaf (imported), 1/2 tsp. rosemary
