1. Monastery Style Lentils
1/4 c. olive oil, 2 lg. onions, chopped, 1 carrot, chopped, 1/2 tsp. each thyme and marjoram or basil leaves, 4 c. stock or seasoned water, 1 c. dry lentils, washed, Salt to taste, 1/2 c. fresh or 1 tbsp. dried parsley, 1 lb. canned tomatoes

2. Herbed Lentil And Potato Stew
1 onion, chopped, 1 clove garlic, minced, 1 tsp. olive oil, 1 tsp. marjoram, 1 tsp. thyme, 1 lg. potato or 2 sm., chunked, 1 c. brown lentils, picked over and washed, 1 can tomato paste, 1 lg. can tomato soup, 2 c. water

3. Turkey Lentil Soup
1 lb. ground turkey, 1 chopped onion, 1 clove garlic, 1 can stewed tomatoes, 6 c. water, 1 can mushrooms, 2 carrots, 2 stalks celery, 1 1/2 c. lentils, 1 bay leaf, 2 chicken bouillon cubes, Salt & pepper to taste

4. Shrimp Lentil Gumbo
1 lb. dried lentils, 1 1/2 qt. cold water, 1 lg. can crushed Italian style tomatoes, 3 sliced onions, med. size, 1 clove garlic, 3-4 yellow neck squash or zucchini, sliced, 1 carrot, sliced thin, 1 lb. raw shrimp, peeled (either fresh or frozen), 3/4 c. olive oil, Salt, pepper, cumin, allspice (about 1 tsp. of each or to taste)

5. Simple Lentil Soup
1 c. dried lentils, rinsed, 2 onions, chopped, 2 cloves garlic, chopped, 1 bay leaf, 2 qts. water, Grated peel of 1 lemon



6. Vegetable Lentil Soup
2 med. carrots, 2 med. celery stalks, 1 med. onion, 3/4 lb. sm. red potatoes, 1 garlic clove, 2 tbsp. olive or salad oil, 1 (14 1/2 - 16 oz.) can Italian style stewed tomatoes, 1 c. dry lentils, 2 (13 3/4 - 14 1/2 oz.) cans chicken broth, 1 sm. head escarole (about 1 lb.)

2 med. carrots, 2 med. celery stalks, 1 onion, 3/4 lb. sm. red potatoes, 1 garlic clove, 2 tbsp. salad oil, 16 oz. Italian stewed tomatoes, 1 c. dry lentils, 2 (14 oz.) chicken broth, 1 sm. head escarole

9. Hamburger Lentil Vegetable Soup
1 lb. hamburger, browned, 5 3/4 c. tomato juice (lg. can), 4 c. water

10. Mother's Lentil Soup
1 1/2 lb. beef (chuck), cut into sm. pieces, 1 lg. onion, chopped, 1 lb. pkg. dried lentils, 1 potato, diced, 1 or 2 carrots, thinly sliced
