Homemade Vegetable Soup Recipe
Ingredients:
1 head cut up cabbage1 c. diced carrots, celery, potatoes
1 med. onion, diced
2 cloves chopped garlic OR garlic salt OR garlic powder
2 c. tomatoes
1/2 c. uncooked Scotch barley
1/2 c. uncooked alphabet macaroni
Cooking Directions:
When soft, add:2 c. tomatoes1/2 c. uncooked Scotch barley1/2 c. uncooked alphabet macaroni
In small pan steep 1 teaspoon mixed pickling spice in some of the beef broth and then add the strained broth to the soup mixture. Add corn, beans or peas as desired. A good way to use leftover vegetables. Just freeze until making soup, thaw, drain and add to soup.
