Tuna Maxistroni Recipe

Ingredients:

2 tbsp. vegetable oil
1 sm. onion, minced
1 garlic clove, minced
1 stalk celery, minced
1 (10 1/2 oz.) can chicken broth
1 soup can tomato juice
1 tsp. dried basil
1/4 tsp. thyme
1 tsp. salt
1/4 tsp. pepper
1 (10 oz.) pkg. frozen mixed vegetables
2 (7 oz.) cans tuna
Grated Parmesan cheese

Cooking Directions:

Heat oil in saucepan. Add onion, celery and garlic. Cook until soft, but not brown. Add undiluted chicken broth and remaining ingredients except cheese, bring to a boil. Reduce heat, simmer, covered, 10 minutes. Ladle into heated soup bowls. Sprinkle with cheese. Serves 4.
