Healthy Supper Soup Recipe

Ingredients:

3 onions, chopped
2 tbsp. butter
1 1/2 lb. lean ground turkey
1 clove garlic, minced
3 c. beef stock
2 lg. cans crushed tomatoes
4 lg. potatoes, diced
1 c. celery, sliced
1 c. green beans
1 c. mushrooms
1 c. chopped spinach
1 c. dry red wine

Cooking Directions:

Cook onion in butter in large Dutch oven. Stir in meat and garlic, cooking until browned. Drain off any fat. Add remaining ingredients, bringing to a boil. Reduce heat and simmer for 1 1/2 hours.
