1. Vichyssoise (cold Potato Soup)
2 leeks, 1 sm. onion, sliced, 2 tbsp. butter, 3 sm. potatoes, peeled and sliced (2 1/2 c.), 2 c. chicken broth, 1 tsp. salt, 1 c. whipping cream, Snipped chives

3. Simple Minded Vichyssoise
6-8 lg. potatoes, 4 onions, 1 lg. can College Inn chicken broth, 1 qt. light cream, Salt & white pepper to taste, Chopped chives

4. Vichyssoise
4 leek or 1 lg. bunch green onions, 1 lg. onion, chopped (do not short change the amount of onion used), 1 qt. chicken broth (I use 2 cans Swansons chicken broth plus 2 chicken bouillon cubes and enough water to make 1 qt.), 1/4 c. butter (I always use butter), 3 plus lg. potatoes, peeled and cubed (I usually use 5-6 potatoes depending on size), 1 pt. half and half or 1 c. heavy cream and 1 c. milk, Salt and pepper, Chives to garnish

4 leeks, cleaned & cut or 4 onions, chopped, 2 med. potatoes, peeled & chopped, 4 c. chicken broth (home made best), 1 or 2 garlic cloves, 3 tbsp. butter, 1 c. heavy cream, 1 1/2 c. milk, Salt & pepper to taste, Chives, snipped



6. Vichyssoise Soup
1 med. onion, sliced (1/2 c.), 1 sm. rib celery, chopped (1/4 c.), 2 tbsp. butter, butter or chicken fat, 2 med. potatoes, thinly sliced, 1 (10 3/4 oz.) can chicken broth (1 1/4 c.), 1/4 tsp. salt, 1 1/2 - 1 2/3 c. half and half, 1/8 tsp. pepper, Snipped chives

2 c. thinly sliced leeks (white part), 1 c. thinly sliced onions, 1/4 c. sweet butter, 6 c. chicken broth, 5 1/2 c. thinly sliced potatoes, 1 tbsp. salt, 1/2 c. chopped celery, 3 c. milk, 1 qt. light cream, Chopped chives

8. Vichyssoise
2 cans chicken broth, 2 cans potato soup, 2 tbsp. minced onion, 2 (8 oz.) sour cream (may substitute 8 oz. plain yogurt)

3 c. sliced potatoes, 3/4 c. leeks, chopped, 1/2 c. onion, chopped, 1 tbsp. parsley, 1 tsp. salt, 1/4 tsp. nutmeg, 2 tbsp. butter, 2 c. chicken broth, 1 c. heavy cream, 1 c. milk, Chopped chives

10. Vichyssoise
2 tbsp. butter, 1/2 c. chopped leeks (white part only), 1/2 tsp. chicken stock base, 1 (10 1/2 oz.) can condensed cream of potato soup, undiluted, 1 c. half and half, 1/2 c. milk, Chopped chives for garnish
