Vichyssoise Recipe

Ingredients:

3 c. sliced potatoes
3/4 c. leeks, chopped
1/2 c. onion, chopped
1 tbsp. parsley
1 tsp. salt
1/4 tsp. nutmeg
2 tbsp. butter
2 c. chicken broth
1 c. heavy cream
1 c. milk
Chopped chives

Cooking Directions:

Put all ingredients except cream, milk and chives in a saucepan. Cook until potatoes are tender. Put cooked mixture into blender and blend until smooth. Pour into a large bowl and stir in cream and milk. Cover and refrigerate several hours or overnight. Serve in chilled cups garnished with chives. Serves 6-8.
