Vichyssoise Recipe

Ingredients:

3 leeks
1 med. onion
3 tbsp. sweet butter
4 med. potatoes
3 pts. chicken stock
Dash nutmeg
Salt & pepper to taste
2 1/2 c. milk
1 3/4 c. heavy cream
Chives

Cooking Directions:

Slice the white part of the leeks fine. Slice the onion fine. Cook until soft in the butter, but do not brown. Peel potatoes and slice very thin. Add to leeks and onion. Add stock and cook at a low boil for 30 minutes. Rub through a fine sieve or whirl in the blender until smooth. Season. Add milk. Bring to a boil. Cool. Add cream and chill. Serve sprinkled with finely chopped chives. Serves 6.
