Vichyssoise Recipe

Ingredients:

4 leeks, cleaned & cut or 4 onions, chopped
2 med. potatoes, peeled & chopped
4 c. chicken broth (home made best)
1 or 2 garlic cloves
3 tbsp. butter
1 c. heavy cream
1 1/2 c. milk
Salt & pepper to taste
Chives, snipped

Cooking Directions:

Cook garlic, onions and potatoes in butter over a low heat for 10 minutes. Add chicken broth and cook for 30 minutes. Add cream, milk and seasonings, and scald. Remove from heat and cool slightly. Puree in blender or put through a food mill. Serve hot or chilled topped with chives.
