Glazed Acorn Squash Rings Recipe

Ingredients:

2 acorn squash
1/3 c. orange juice
1/2 c. brown sugar
1/4 c. light corn syrup
1/4 c. butter
2 tsp. grated lemon rind
1 tsp. salt (optional)

Cooking Directions:

Preheat oven to 350 degrees. Cut squash crosswise, remove seeds, and slice into 1/2 inch thick rings. Arrange in single layer in covered baking dish; pour orange juice over rings and bake, covered, for 30 minutes. Combine remaining ingredients in saucepan and simmer 5 minutes. Pour over squash and bake 15 minutes longer (uncovered), basting occasionally. Serves 4 to 6.
