Baked Eggplant Recipe
Ingredients:
4 c. eggplant, diced & cooked1 pkg. Stove Top stuffing (chicken)
1 can chicken broth
2 lightly beaten eggs
Salt & pepper to taste
1/2 c. diced onions
2 tbsp. butter
1 c. Cheddar cheese, grated
Cooking Directions:
Combine eggplant, stuffing (mix that comes with Stove Top stuffing should be discarded), chicken broth, eggs, salt and pepper, onions, butter and 3/4 cup of Cheddar cheese in casserole dish. Sprinkle 1/4 cup Cheddar cheese on top. Bake at 350 degrees for 25 minutes.Other Recipes you might like:
