Barley Pilaf Recipe
Ingredients:
3 tbsp. butter1 lg. onion, finely chopped
1/2 - 3/4 c. finely chopped carrots
2 cloves garlic, minced
1 c. whole, unhulled barley rinsed with cold water
5 c. chicken stock
Salt and pepper to taste
Cooking Directions:
Heat oven to 375 degrees.Melt butter in flame proof casserole. Add onion and carrots and cook 5 minutes (until soft, not brown). Add 4 cups of the stock to dish and bring the liquid to a boil. Cover pan and put in oven. Cook for 1 hour.
Next stir in the rest of the stock. Recover pan and cook 30 minutes longer or until the stock is absorbed. Stir and serve at once.
(Note: Try mushrooms, raisins, nuts or anything you like!!)
