Chicken With Black Olives & Basil Recipe
Ingredients:
1 chicken, cut up into 8 pieces15 jumbo black olives, pitted & sliced into rounds
3 lg. cloves of garlic, chopped
10 lg. leaves of fresh basil, wash & leave whole
3 bay leaves, whole
1 carrot, cut into thin rounds
1 (15 oz.) can of whole peeled tomatoes
1 c. dry white wine
1 stick of unsalted butter
Salt & pepper to taste
Cooking Directions:
Wash chicken well in cold water and pat dry. Cut up butter into squares and stuff under the skin. Place chicken in 9 x 13 inch pan (preferably Pyrex). Add all of the remaining ingredients. Cover tightly with aluminum foil and bake at 375 degrees for 30 minutes. Remove foil and raise temperature to 450 degrees and bake for an additional 15 minutes.
