Pineapple & Beet Salad Recipe
Ingredients:
1 (20 oz.) can chunk pineapple, drain, save juice1 (16 oz.) can beets (or 2 cans), sliced, drain, save juice
1/2 c. pineapple
1/2 c. beet juice
1/3 c. vinegar
1/2 c. sugar
3 tbsp. cornstarch
Cooking Directions:
Mix pineapple juice, beet juice, vinegar, sugar and cornstarch together. Bring to boil and lower heat. Stir until thickened. Add sliced beets and chunk pineapple to mixture. Chill. Serve on lettuce. Yields: 8 to 10 servings.Other Recipes you might like:
