Carrots Lyonnaise Recipe

Ingredients:

2 pkgs. carrots
2 chicken bouillon cubes, dissolved in 1 c. water
4 tbsp. butter
2 medium onions, sliced in rings
2 tbsp. flour
Salt
Pepper
3 tbsp. brandy

Cooking Directions:

Cut carrots into strips. Parcook in 1 cup boiling water with 2 chicken cubes. Saute onions in different pan in butter. Sprinkle with flour, salt, and pepper. Add 1 cup of the carrot water to the onions; stir. Add carrots. Cook about 5 minutes. Sprinkle with brandy and small amount of granulated sugar. Can also be made ahead and refrigerated. Bake at 325 degrees for 30 minutes. Serves 6 to 8.
