Vegetable Medley Recipe

Ingredients:

2 c. cooked rice
1 can cream of mushroom soup
1/2 can milk
1/4 c. dry white wine or sherry
1 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. pepper
1/2 cauliflower
1/2 bunch broccoli
1 sm. onion, chopped
2 carrots, sliced
1 c. Cheddar or Swiss cheese, shredded

Cooking Directions:

1. Steam vegetables until tender. Drain.

2. Butter 2 quart baking dish. Arrange a layer of the rice in the bottom of the pan. Top with the vegetables to form another layer.

3. In blender mix soup, milk, wine and spices until well blended.

4. Pour soup over vegetables and rice. Top with cheese.

5. Bake in 375 degree oven for 30 minutes uncovered until bubbly and cheese is lightly brown. Let sit 5-10 minutes before serving. Serves 4-6 people.
