1. Chinese Spinach Salad
1 lb. spinach with stems removed, 3/4 c. drained bean sprouts or fresh, 1 sm. can sliced water chestnuts, 1/4 lb. fresh mushrooms, 8 slices bacon, fried and crumbled, 3 hard-cooked eggs, finely chopped, 1 sm. onion, diced, 1/2 c. salad oil, 1/4 c. sugar, 1/4 c. catsup, 2 tbsp. Worcestershire sauce, 1/4 c. vinegar

3. Easy Chinese Tomato-spinach Soup
1 tbsp. cornstarch, 1 tbsp. soy sauce, 1 tbsp. sherry, 1 tbsp. oil, 2 c. water, 1 (28 oz.) can tomatoes, undrained, cut up, 2 cubes chicken bouillon, 2 c. shredded fresh spinach, Sm. piece boneless sirloin in paper thin strips

4. Mandoo
1 pkg. Guyza wrappers, 1 to 2 lbs. ground beef, 2 tsp. grated ginger root, 1/2 c. spinach, chopped, 1 to 2 c. Chinese cabbage, chopped, 1 can bean sprouts, 2 to 3 chopped scallions, 1/2 lb. tofu, 2 tsp. sesame oil, Salt & pepper to taste, Sesame seeds

5. Chicken Florentine
2 lbs. chicken breasts, deboned, skinned, cut in chunks, 2 tbsp. olive oil, 2 tbsp. flour, 2 cans chicken broth, 1 can water, 1 tsp. sesame oil, 2 lg. onions, chopped, 1 bunch green onions, chopped, 1 red Bell pepper, sliced, 1 tbsp. Polander's chopped garlic, 3 celery stalks, chopped, 3 carrots, shredded, 8 oz. mushrooms, sliced, 1 tbsp. parsley, chopped, 1/4 tsp. mace, 1/4 tsp. thyme, 1/4 tsp. Chinese red pepper, 1 tsp. J.D.'s Magic, 2 bags fresh spinach, cleaned, stems removed



6. Shrimp Cantonese With Rice
3 c. hot cooked rice, 1 lb. peeled deveined raw shrimp, halved lengthwise, 3 tbsp. butter, 2 c. diagonally cut celery, 2 c. sliced onions, 8 oz. fresh spinach leaves, 1 (16 oz.) can fancy mixed Chinese vegetables, 1/4 tsp. pepper, 1/4 c. soy sauce, 1 1/4 c. chicken broth, 2 tbsp. cornstarch

7. Shrimp Cantonese With Rice
3 c. rice (cooked), 12 oz. shrimp, split in half, lengthwise, 2 tbsp. oil or butter, 2 c. sliced celery, 2 med. onions, sliced, 8 oz. fresh spinach, 1 (16 oz.) can Chinese mixed vegetables (drain), 1/4 tsp. pepper, 1/4 c. soy sauce, 1 1/4 c. chicken broth, 2 tbsp. cornstarch

8. Shrimp Cantonese
24 to 36 raw shrimp, peeled & halved lengthwise, 2 tbsp. butter or vegetable oil, 2 c. onion, sliced, 1 can fancy Chinese vegetables, rinsed & well drained, 4 tbsp. cornstarch, 1/4 tsp. pepper, 3/4 c. chicken broth, 1 c. raw rice, 2 c. celery, sliced, 1 qt. fresh spinach leaves, 2 tbsp. soy sauce, 2 c. water

9. Tortellini Spinach Soup
1 tbsp. olive oil, 1 c. sliced carrots, 1/2 c. chopped onion, 1 garlic, minced, 3 (14 oz.) cans chicken broth, 1 (9 oz.) fresh cheese filled tortellini, 2 c. leaf spinach or 10 oz. pkg. Chinese pea pods, 1/2 tsp. oregano (optional), 2 oz. shredded Mozzarella cheese

10. Yosenabe
6 dried mushrooms, 1 (2 oz.) pkg. bean thread, 4 oz. fresh or frozen rock cod or other fish, 2 c. coarsely chopped Chinese cabbage, 2 c. fresh spinach (6 oz.), 6 lg. shrimp in shells, 1 c. shucked oysters, 6 cherrystone clams in shells, washed, 6 slices fish cake (kamaboko) - (optional), 4 oz. fresh tofu, cut into 1 1/2 inch pieces, 4 green onions, bias-sliced into 1 inch lengthwise, 4 c. dashi (see recipe)
