Egg Plant - Au Gratin Recipe

Ingredients:

1 egg plant (2 lb.)
3 med. onions
1 egg, beaten
1/2 c. Cheddar cheese
1 c. seasoned bread crumbs

Cooking Directions:

Pare and dice egg plant; cover and cook with onions in small amount of water and salt; cook until tender; drain. Add beaten egg, bread crumbs and grated cheese. Mash egg plant. Place in greased baking dish. Sprinkle top with cheese. Bake at 350 degrees for 30 minutes. Tastes like dressing.
