Egg Plant Casserole Recipe

Ingredients:

1 med. eggplant
2 beaten eggs
Cracker crumbs
1 tbsp. sage
1/4 tsp. salt
Dash pepper & garlic powder
1 sm. chopped onion
1 can cram of mushroom soup
Velveeta cheese

Cooking Directions:

Peel, cube and boil eggplant until soft. Mash and add to the following: 2 beaten eggs. Add cracker crumbs to thicken. Add 1 tablespoon sage, 1/4 teaspoon salt, pepper, garlic powder and add small chopped onion.

Layer in casserole (twice) : 1) Eggplant. 2) Velveeta cheese slices. 3) Cream mushroom soup. Bake at 350 degrees for 20 minutes.
