Simply Elegant Recipe
Ingredients:
1-2 tbsp. butter3/4-1 c. Half and Half cream
1/2 lb. shitake mushrooms
2 prepared seasoned chicken cutlets
12 leaves fresh basil (can add more if you like)
12 oz. fresh fettuccine
Cooking Directions:
(From a nice deli, or if you want a vegetarian meal leave it out).Coarsely chop the mushrooms and saute in butter. While mushrooms are sauteing cut the chicken cutlets into length wise strips, then cut in half, prepare the basil in the same manner. Add the Half and Half to the sauteed mushrooms and stir, let simmer for a few minutes then add the basil, stir, wait a few minutes, then add the chicken and stir, let the whole mixture simmer for a few minutes while you cook the pasta (the pasta should be al dente). In a large bowl mix the cooked pasta and the rest of the ingredients.
Serve immediately with a tossed salad and hot crusty French or Italian bread. If you like wine a nice dry Long Island wine from Lenz or Pindar goes very well.
