Green Fried Tomatoes Recipe

Ingredients:

4 med. green tomatoes
2 eggs, beaten slightly
Flour or seasoned bread crumbs
Salt and pepper to taste
Butter, butter or cooking oil

Cooking Directions:

Slice tomatoes 1/4 inch thick. Beat eggs slightly, add salt and pepper. Put in shallow dish for drippings. Dip each slice of tomato into eggs, then into a shallow dish of flour. Cover both sides thoroughly with egg and flour. Heat 2 or 3 tablespoons of butter or oil (use more, if needed) in large frying pan. When hot, fry 1 layer of tomatoes at a time until lightly browned on both sides. Remove and serve at once. Serves 3-4.
